Well, that settles that age old question, then.

Please correct me if I am incorrect but isn't the term 'Dark Matter' simply another way of science saying 'We don't yet know what all this other stuff actually is'?

We become dark matter.Maybe you should read about the carbon cycle? http://en.wikipedia.org/wiki/Carbon_cycle
what you your personal self becomes, is divided into many small parts. Your matter is only on loan and will always take form in other organisms, rocks etc. so you just becomes what you were made off. Matter can not be created or destroyed.
We all replace our carbon on a daily basis, I think we will replace all carbon within our bodies within 6 years? That comes from plants, and the animals that eat the plants. Without carbon obviously there would be no organisms, unless they were silicone based. And obviously if things do not decay and rock does not sublimate then you get carbon lock-up. No more organisms carbon being the fundamental driving force.

This is interesting because this means you are made from material that is billions of years old. Why? For all you know you could possess an atom from Jesus christ.

We become dark matter.
i think you're on the right track but i'd put it slightly differently.
most of the human energy field exists beyond the range that the human senses (or technology for that matter) can detect. in occult terms, we speak of the etheric, the astral body, mental, buddhic and so on. these all represent different vibrational frequencies, or different energy densities.
they are 'non-physical', and since, for the most part, they can't be detected by our sense organs or our primitive technology (with some notable exceptions), they could qualify as dark matter or dark energy. it seems to be a pretty generic term that basically amounts to scientists saying;
"well, what we CAN detect comprises barely 5% of reality, so the rest that we CAN'T detect, we'll just call 'dark matter'..."
getting back to the 'subtle bodies' that comprise the human energy field that occultists and clairvoyants are familiar with, we could consider that they come under the banner of 'dark energy', because most of what composes them we cannot access from our perspective in the 3D realm we inhabit with our frail senses and primitive technology (although we do have 'aura photos' and such, but they only depict a fraction of what is there).
what happens when we 'die' or have an OBE, is that we cease to be anchored by the physical body and our locus of awareness shifts to that of the 'astral' body, this 'dark energy'. we thus perceive a different range of frequencies that the astral body is attuned to; a world of 'dark energy' that the occultist or experienced OBEer like Robert Monroe is familiar with.
now, this is a massive oversimplification, but let's face it, we all have other things to do (!) boy better know, i would say this;
we already are 95% + composed and comprised of 'dark matter' or 'dark energy'.
when we die, we don't become it, we merely experience a different portion of the electromagnetic spectrum that exists because our awareness shifts and becomes anchored in the occult 'astral' or 'mental' body, AKA, dark energy. we no longer are tethered to the illusory holographic physical body that is designed to perceive a very narrow range of frequencies, some of which we detect and call 'the physical universe'. thus, we experience 'reality' through the perceptual vehicle of the astral or mental body, composed of 'dark energy' as it may be.
without the animating and organizing energy that consciousness is, the energy/matter that composes the physical body succumbs to entropy and the physical vessel decomposes. all the while we don't give a toss about that because we're off doing whatever people do 'in the afterlife'... probably laughing at the ignorance of humanity in general and their silly concepts of death and frail scientific 'laws' :)
dark matter/aether/akasha/consciousness, etc, etc... take ya pick
